DRIVE THROUGH Chicken Soup RecipeThis recipe was invented after I made the promise to myself to cook one chicken per week for my family. Chicken is so versatile and will usually feed even the most picky-eating teens. The left overs can hang around for days and be used in so many other ways- chicken salad, sliced in sandwich, quesadillas, dipped in ketchup, etc..

I decided the Slow Cooker or as we used to call it in the 70's, Crock Pot, was the way to go for this starving family on the run...

So, here for the first time revealed to the world is my very own Chicken Soup recipe... My mother is so very dead but I can hear her laughing at the thought that I am publishing a recipe... So. Mom, the Chicken Soup out of the can Queen!, this one is for you!

You need a Slow Cooker large enough to fit the chicken in...
So, put chicken in cooker with:

  • 2 cups water
  • 2 stalks slice celery
  • 2 carrots chopped
  • 1-2 onions chopped

Turn on cooker for whatever time- either 4 or 8 hours works for you and go about life...

Come home to a house that smells like a home and have soup to bowl in 30 minutes.

Start cooking rice or whatever you wish to put in the soup. I keep frozen brown rice in the freezer so I can have really fast soup when needed.

Here's what I put in:

  • Pour the base liquid from the Slow Cooker into a big pot- that is your delicious soup base any veggies left over in fridge and
  • 1 package of cut up butternut squash
  • 1 can chopped tomatoes
  • 1 large scoop Minors Chicken Soup Base {from good to great soup}
  • cut up zukes, summer squash and sugar snap peas
  • {Just add whatever your family likes to EAT!
    This is not rocket science. This is so easy and they usually love it- with the exception of those kids who still only eat Cheerios and American cheese and chicken fingers...}

Simmer for 15 minutes until all veggies are soft.

Cut up some chicken and add after the veggies are all cooked.
Add rice or pasta or beans or whatever...

It really is better after it sits awhile but it is still great right away.

Put it into your bowl and You can sprinkle with parmesan or feta cheese and enjoy!

You have a great pot of soup for many days...
